Menu Monday Tips For Challenging Meal Times

 Good Morning and Welcome to a new week. On Monday I try to share my meal plans. Sometimes I get busy and end up posting on Tuesday.

We're needing some sunny and bright!  We're having a rainy few days here in North Texas!  Brr. It's Chili, Soup and Stew weather! 

Before I get into the menu plans I wanted to share a few thoughts . . .

I know we are all in different stages of life.  I hope that my blog is an Encouragement to all ladies from Newlywed/Childers, to new moms, moms of toddlers and folks like me who are dealing with Aging and being a Care Giver to a loved one.



Actually I think as wives and mothers we are all Care Givers no matter what stage or Season we are in.

We all strive to do our best even when times are challenging and changing.



We are expecting a new Grandson in December.  I am a Retired Pre-school teacher.  I have a heart for toddlers and moms of babies and toddlers.

I think meal planning and making meals our family 'Will" eat are one of our most important jobs as wives!

So today I am sharing a few thoughts I've recently  had to encourage the Cowboy to Eat.


As with moms of toddlers I realize I always need to have fruits and veggies readily available.  That means washed and prepped  and in sight.  'In Sight's is the key to encouraging eating healthy snacks.  I think.

This week I am going to try offering the Cowboys Cold plate appetizer (that usually includes Tuna) earlier in the afternoon maybe as an outside snack before we build a fire. Well maybe not this week it is expected to be cold and raining!

Oh the challenges!

Lately he hasn't had much of an appetite so he has been skipping his appetizer plate. 

And honestly I think that has affected his condition.

I am glad the weather is pleasant and he is encouraged to be outside.

At least it's a start.  Exercise is none existant and as I think about it now I need to add the topic to my 'To Do' List and think of clever ideas to encourage exercise.

Last week we took the dogs to the lake.  An 'Outing' a few times a week for us is important.  It is a challenge for me because if I did not encourage it the Cowboy would sleep on the couch all day.

It is an odd season for me and one I am learning.

Monday  Mexican Chicken and Rice, Borracho Beans, Salad

Tuesday Pork Tenderloin, Stuffing, Green Beans

Wednesday   Chili and Cornbread

Thursday Fried Chicken, Corn, Mashed Potatoes and Cream Gravy

Friday Pan Seared Fish Filets, Rice Pilaf, Steamed Broccoli


 This is the menu I planned on Saturday before our freezer died on Sunday!

Oh the challenges!
So tonight I am cooking a Roast and Ground Beef for later in the week.

I don't plan snacks or appetizer, lunches or desserts.

I am struggling with lunches. Lunch to me is soup.  I am not really a sandwich person so I have to really look for ideas.  And then in our case The Cowboy is on a Low Sodium diet so no processed Meats or canned Soup.

I make Soups and enjoy but Sandwich ideas are a challenge.

Vegetable Beef

Grilled Cheese, BLT ,(low sodium Bacon)

So this week my Menu plans are a bit off.  But I am working through the challenges and smiling anyway.

We always make our own soups from scratch. They are so much more yummy and healthy for you than the canned stuff. We use a lot of Mrs Dash's seasonings and only a pinch of salt.
