Foodie Friday- On Sunday


Welcome to foodie Friday on Sunday!
I don't know where the time went the last few days.  But the good thing is you'll get a glimpse of the weekend Rustic plates!  

In case your a new friend I want to say Thank You for coming by to spend a few minutes.  My Foodie post about is the Comfy Homey meals I prepare for my husband The Cowboy and I.  My dishes are made with love and photo'd with nothing special no edits just quick Rustic shots.

The Rustic Plate held . . .
The Cowboy asked for Sausage Biscuits one morning. Here's his plate with an Apple for later for him and one for the dogs.
For dinner we had Chicken Tenders below at the end of this post you'll find how I make Tenders
The Cowboy really likes Spinach and Asparagus with Ranch or Bleu Cheese Dressing.  I had to 'Wing' it this time with Caesar Dressing.
And here's my plate.  Yes I really do eat.  LOL.  I rarely show my plate.  It is always waay more Rustic.  By the time I am ready to plate my food I am too anxious to eat to shoot a fancy plate.  I cooked my Asparagus in a little Butter and Bacon grease.  I don't like it raw.  And I am not a fan of canned Corn.   I passed and saved room for dessert.

As simple as it was it was yummy!  It was the Cool Whip that made it special.  HeHe.
Did I share this dish last week?  Photo's were still on my phone so just in case I missed them.  I did a  'Make Ahead/Freezer meal while I was cooking.  I had  thawed some Cat Fish  and it was too much for one meal so I pan-seared some for Mexican Cat Fish with Jalapeno Cream Sauce.  All ready for the freezer.  I'll only need to make a quick sauce and add veggies and Spanish Rice.

Oh how I love Okra.  My plate! I had to take a pic of it I had a fresh Tomato.  So yummy.
I have been wanting to  To make Oriental Pepper Steak for so long.  It was so good but not as good as usual.  I used a Pinterest recipe because I was too tired to look for my 'Family Recipe'
For dessert Pound Cake with the Strawberry Glaze saved from a Jello Cheesecake mix.  Topped with Cool Whip. Yum.
I think one got a bit more Cool Whip.  I admit it was mine.
The Cowboy ate a little better this week.  I managed to get him to eat a Grilled Cheese.  The Bread was Spinach Parmesan.  Weird huh.  I really couldn't taste the Spinach or Parm.
I over heated the Tortilla again . . .
The Cowboy didn't complain.
Carrots, Onions and Red Bell Peppers to roast with . . . 
A Pork Loin I seasoned and seared really good so it would make a good Gravy.
Ready for the oven.
I made Mashed Potato's.  The Cowboy got his token 2 Carrots he dosen't really like Carrots. 

 Truthfully this meal wasn't as good as last time.  My roast was not nearly as tender and the Gravy didn't brown well.  I must not have put water in the roasting pot so I didn't really have good drippings for the Gravy.  

Tuesday lunch.  Mid Morning the Cowboy asked me 'Is it Tuesday?"  I responded "Why you want Taco's?"  They are on sale so I hopped in the car.  We love Taco's.  Easy clean up for me!

My photo's are out of order.  But I feel like I barely get my post done the new Blogger is still a challenge for me.  

Sunday lunch.  I was surprised he chose Chorizo.  He hasn't wanted it in weeks! 

And this was Breakfast which is why I was surprised he wanted the Eggs and Chorizo.  He hasn't been eating much.  I hope he is getting back to normal!
On Saturday I boiled a pot of Beans all day.  They really weren't all that great but they were done!  that is an improvement for me!
I ran some errands on Saturday morning and suggested I bring back burgers.  The kid Burger is just the right size.

One last plate of Red Velvet Cake.  I think this is the first pic. I've taken.  It was really good with Cool Whip.  Yes. I like Cool Whip.
And lastly Friday night I made the Deer Camp Casserole that we love.   This one is a family favorite I'll have to share the recipe some time. 


But today I am sharing how I make Chicken Tenders . . .
I just use Flour, Milk and an Egg . . .
I usually use 2 Pyrex Pie plates.  One for the Flour and one for the Milk/Egg which I mix together.  But my 2nd Pie plate was dirty so I grabbed a serving dish from Mothers Pottery I actually think it worked better because it was deeper.
The Breasts were really fat so I sliced and then cut the thicker pieces through the middle.
They cook better if they are close to same size.
The Cowboy bought this mix and has been wanting me to use it.  I don't like mixes but I try to accommodate especially now when he isn't eating much.
I only used the mix on part of the Chicken and fried it last so it didn't make the rest of the Chicken too hot.
I save the Flour for Gravy.
Fry till Golden turning often.
 I do love Chicken Tenders and like cooking them better than a whole Chicken.
I am a messy cook . . . The grease was too hot for the second batch so I took the pan off the burner till it cooled a bit.

Waiting for the next batch. Look at that yumminess for some good 'ole Cream Gravy.

Drained  and resting.  I laid the Hot pieces up and down and the regular horizontal.

Happy Homemaker In Texas

 Welcome to Happy Homemaker in Texas the day I join Sandra at Diary Of A Stay At Home Mom for the party. Sandra provides the prompts.  I add a few of my own.





The Weather . . . More gorgeous Fall days.  Upper 70's in the morning and mid 80's in the afternoons.  Perfect for outdoor play.

Outside my window . .  Today I am writing in the studio on my writing/journaling space.  I have a peaceful view this morning of my lovely Yellow/Red Cannas in the front bed.


On the breakfast plate . . . I had a package of Blueberry Muffins. 


The Cowboy was excited when I brought them home.  He ate 4 of the 6.

This morning I am feeling . . . Rested and Accomplished. Rested because I tried sleeping on the pull-out in my Studio.   The Cowboy has not been sleeping well so I gave him 'space'.  I feel accomplished because I have already run the dishwasher.  Put Pinto's on the stove (remembered to soak last night) and baked Muffins.

On my mind . . . President Trump praying for his health.

I just finished reading . . .

This was a really good read.  One of those you can't put down.  I'll posting a review in a few days.

Just finished listening to . . .

I received an invite from author Sara Rossett to be one of the first to try the Book Funnel App and Audio version of the book.  I really enjoyed this book and I love the series.

On the menu . . .  Serving the meals I plan are still a struggle.  It has been better the last few days.  I am learning to adapt what I plan. 

Monday  Kielbasa, L/O Pinto's Fried Potato's and something a bit O Green maybe a Spinach w/ Ranch appetizer

Taco Tuesday Always easy and a Family Favorite.  Why do I stress about this?

Wednesday Chicken Pot Pie and hopefully a Salad

Thursday Spaghetti with Meat Sauce from L/O Taco meat, Salad and Garlic Bread

Friday Beef? Maybe  I can find Steak on sale this week.  If not I have Mussels and Soft Shell Crab in the freezer.

In the studio . . . One of my FB groups offered some fun Fall SWAPs Fall theme Fabric,Lace,Fiber Tassels with dangles. 

We are required to post a Sneak Peek.  I pulled these fabrics for the Journal Page as my inspiration. 

For the Tassels I pulled several trims and some fabric I will cut into strips.

I also need to repair my daughters quilt

Some of the applique is coming unstitched from the many, many times she's washed the quilt.  That is another entire post topic.
It is a King Size Quilt that I completely quilted a few years ago  on this $125.00 Brother Machine purchased at Walmart. 

To relax/ have fun the week . . . I have a few ideas to get the Cowboy out and about.  Maybe go to the lake with dogs.  Go to Grapevine and wander shops or go to the Pumpkin Patch.  It is a favorite place to go with our Grandson.

In the garden . . . Prepping a few new beds.  My sister is sending me Perennial Sun Flowers.  I am so excited I never heard of the them!   I am still getting a hand full of Okra every few days.  I may have enough for a small batch soon.  The Cucumbers got rejuvenated after rain few weeks ago but I think the are about done.  I will be pulling out the vines and prepping the bed for something else  maybe some Spinach.  

I have Kale growing in a pot on the front porch and Collard Greens that I need to get into another pot.

I hope I can find some Ornamental Cabbage or something pretty for the porch  pots.  I've been looking but the affordable places near me don't have much stock any more.  Things have changed.  

On the t.v. I don't watch t.v. that is Cowboys thing.  We do watch cooking shows for a bit in the evening but every channel has Halloween stuff and I am not interested.  I have been watching videos on my phone some when I need a few minutes to rest.  I like gardening videos and I am learning a lot!  I have found some cooking videos I like  here is my play list . . .

I am always a fan of Lauren Carr.  I have enjoyed each book and each series that she has produced.  Some of the other series have a bit of a Cozy theme goin' on but they really aren't and now she's done it with Killer Deadline.  
I enjoyed this new character Nikki she's a true cozy character with a history, a dog and a mystery to solve. And just maybe rekindling a romance. 
But first she need to get to the truth about her fathers death. 
I enjoy reading Killer Deadline when it was first released earlier this year. 
I was fun to go back and now listen to it.  The audio version brought the story to life and I enjoyed this chance to have someone else read the story to me.  
Audio books are not my first choice but by accepting the invitation to be on this tour I think I have developed a new interest. 
I now enjoy listening to a book while doing other jobs and tasks especially if you have not time to read.

Hello Zack thanks for taking a moment to chat with me. I know you’re a busy photojournalist, but have you ever been interviewed for a blog that caters to the ladies? 
Hello, and thank you for inviting me to your blog today. To answer your question, no, I have to admit, this is a first for me, but I’m thrilled to be here.

Well before we get into Anastasia, can you tell us a little about yourself?  Like what was your best/favorite assignment? How long have you been a journalist? Was photography a gift or a learned profession? 
First, to clarify, I’m a photojournalist, not a journalist. That means I mostly use my camera to tell a story rather than words. I became interested in photography as a teenager and immediately knew I wanted to pursue a career using my camera. I’ve also always had a keen curiosity about the world. Combining those two passions led to a career in photojournalism.

As to my best or favorite assignment, I’d have to say anytime I travel somewhere I’ve never been and have the chance to learn something new.

How did you meet Anastasia? 
Anastasia found herself in a huge financial quagmire when her husband suddenly dropped dead in Las Vegas. She thought he was at a sales meeting in Harrisburg, PA. That’s when she learned of his hidden gambling addiction and that he’d not only wiped out their savings but racked up thousands of dollars in debt to both credit card companies and a loan shark. 

Prior to learning all this, she had used the apartment above her garage as a studio/office. To bring in some extra income, she rented out the apartment. I was looking to move out of my high-rise condo in Manhattan for a quieter location away from some crazy neighbors who kept calling the cops on me, claiming I was cooking up meth in my darkroom.

Can you tell us about your first date?
I took Anastasia to the Campbell Apartment for drinks, followed by dinner. If you’d like to know how special a place that is, you’ll have to read Death by Killer Mop Doll. Once you do, you’ll want to stop by yourself if you’re ever in New York.

Did you realize that she is such a sleuth? 
Not at first, but then again, neither did she. Anastasia refers to herself as a reluctant amateur sleuth. She’d be more than happy to give up this sideline that has been thrust upon her, and truthfully, I’d be thrilled if she did. I don’t like her risking her life. Unfortunately, the dead bodies don’t stop coming.

So this might be an odd question but just how many murders has she solved? 
We’re into the ninth book in the series, and there’s been at least one murder per book, plus a number of attempted murders. I’ve lost count at this point, but it’s well north of a dozen.

Does her sleuthing and stumbling onto dead people worry you? 
Constantly. It also worries her sons and mother. She keeps promising she’ll leave the sleuthing to the professionals, but when the safety of her family is at stake, she can’t help herself. How can you blame her?

I know guys don't usually get asked this, but I am just curious. How did you know Anastasia was/is the one? I mean she's always in some kind of trouble or murder investigation. Are you some kind of superhero guy, or do you just like to live dangerously?
Anastasia is convinced I work for one of the government alphabet agencies because of where my assignments often take me and some of the situations I’ve found myself in. Of course, I deny this. Then again, even if I were a spy, I’d deny being a spy. And if I were—which I’m not saying I am—I guess that would make me a superhero. But that has nothing to do with falling for her. When you meet “the one”, you just know. Nothing else matters.

And so, you bought the ring. Have you guys set a date? 
Not yet. We’re in discussions.

So how confident were you she would say yes? 
You could say a little birdie told me, or in this case, a not so little one—Ralph, Anastasia’s Shakespeare-quoting parrot. We’ve sort of bonded.

What about her sons. Did you hit it off with them from the beginning? 
I did. Nick and Alex are great kids.

Just between you and me, when wedding plans become the focus do, you think Anastasia will become a Brideszilla? 
Definitely not. However, I can’t say the same for her mother. If it weren’t for the fact Flora would probably kill us, we’d elope.

Are you worried that you'll have to run interference if Lucille (the ex-mother-in-law) sticks her two cents in? 
Lucille likes to push her weight around, but she knows I push back. I’m bigger and meaner. I think I’m the only person who has ever intimidated her.

Well I know you have to run since you guys are off on a fabulous cruise. I hope we can chat again, and next time bring Anastasia. I'd love to hear all about the cruise!
Thanks! I’m sure she’d love to stop by for a visit. As for the cruise, though, you know author Lois Winston writes murder mysteries, right? What are the chances of getting through this cruise without at least one dead body?
