Menu Monday-Batch Cooking



Hello and Welcome.  I hope your day is getting off to a great start!

Today I am sharing my menu plans for the week. 

And a few plans for Batch Cooking this week.


Here's the Menu

Monday-Sunday night I cooked Chicken & Dumplings so we will have a bowl.  I planned to serve with some fresh veggies but there are none in the house.  Canned Green Beans and canned Corn which I'll kick up by making Fritters will be the meal tonight!    There are Cucumbers for the Cowboy and I'll have some Cherry Tomato's from the garden.

Speaking of the garden I have Okra.
Only 1.  I sure hope more pop out soon!

Tuesday Pulled Pork batch cooked from the freezer Twice Baked Potato's from the freezer and Ranch Style Beans

Wednesday I had another plan but things change I'll be making Potato Soup and prepping more Potatoes for Hash Browns and Baking a few for the freezer for another night.
My Potato Soup will be the base for Clam Chowder for Friday

Thursday Chicken Taquitos, Spanish Rice and Pinto Beans from the freezer. Yes I did make Pinto's and they were so good.  I finally figured out the key!

Friday Clam Chowder, Fish Sticks and Onion Rings

My plans don't really include fresh veggies this week.  
It is still a couple weeks before payday so I am being as creative and as frugal as I can.

So for Batch Cooking this week  I'll prep and freeze some Russet Potato's


I also plan to thaw some Ground Beef and cook it to freeze in packets for Taco's and Spaghetti.  


I have plans to buy my produce and prep it to cook or prepare in batches and have ready in the fridg. for meals.

When I have plenty of Eggs I scramble a big skillet full so
I have 2 days worth ready for Breakfast.

Batch cooking really works for me right now.  Most days I feel like I am chasing my tail!  I try to stay on top of things and keep the Cowboy with good food and happy environment.

And I thought 
A great read.   Although Pinto is a Middle Grade book it is great for the whole family.  
If your schooling at home now a days and want a little extra check this one out to share with your entire family. 
The chapters are short enough you could read together as a family.

  I like books like this.  I remember being 'snowed in' in a new city and  reading together when my kids were teenagers. 

Pinto's story is told through his eyes.  The eyes of the horse which makes it a fun read for kids.  And the adult horse lover too. 
Pinto is just the kind of book horse lovers enjoy.  

M.J. Evans' gives the reader a great story based on true events. 

I enjoyed this book and will be adding it to my book shelf.  I look forward to reading more books in this collection by the author.

Happy Homemaker in Texas

Hello and Welcome to Happy Homemaker in Texas . . .

I can't decide. 
Which one do you like best?

 The weather
 Expected to be nice this week I think the high is going to be Friday 98 currently it's 90 and it's there's a cool breeze I'm sitting outside enjoying the break-in the dog days of summer


 On the breakfast plate nothing yet got up early and mowed the front yard just fed the dogs relaxing and actually posting this on my phone I'm thinking a light brunch of fried eggs hash browns and a Sausage Patty

 On The To Do List
 The list that keeps getting longer before it gets shorter still trying ...to organize the books on the bookshelves and make room for more 
...this should be number one fall planting I need to get some fall cucumbers and green beans going this week need to get cabbage and spinach and broccoli going soon

Chore I am not looking forward to
Folding laundry and putting away.  I am trying to come up with a method that will help me keep the clean laundry basket empty.

To relax this week
I am going to try to spend more time running my sewing machine.  Whether I am sewing paper crafts or making quilt projects time sitting at my machine relaxes me.

Monday Chicken & Dumplings Cracker Barrel style 
AKA a small bowl of leftovers with fresh veggies of the day
Tuesday Pulled Pork (leftovers from the freezer) topped Baked Potato's, Mixed Green Salad
Wednesday Cajun Alfredo Pasta, Salad and Garlic Bread
Thursday Chicken Taquitos, Beans and Spanish Rice
Friday Rotel Sausage Quiche, Fresh Veggies of the day

A new recipe I tried 
and it was so good!  We had gotten a few Banana Peppers and the food pantry this week.  My only experience was when both our moms just  served them raw.  But this modern day MaMa GrandMa googled and found a great recipe over here/ here
