Foodie Friday --Reverse Sear Ribeye DIY

Welcome to Foodie Friday the day I share our meals from the week.  My meals are served on my Rustic Dinner Plates. 
Rustic?
Because my photo's are not staged, not edited just showin' ya some good 'ole food!
Oh and at the end learn how to cook Steak!
The bread looks a bit blah and maybe so does the Pasta but it was sooo yummy!  Believe it or not it was one of those meals you buy in the deli. (at least in my store) We received it from a Pantry.  It was one of those that you make yourself complete with Diced Chicken Breast, Pasta (already cooked), Alfredo, Mozzarella and Parmesan and a tiny little jar of Sundried Tomatoes.  I already had Chicken Breasts marinated so I used them instead of the diced Chicken. 
The complete meal.  It was hot and ready to be served and I didn't have a tray handy so the Green Beans didn't quite fit.  LOL.  They were so good.  Cooked with Bacon and Butter and S&P.  The salad was simple mixed greens Red Leaf Lettuce and Arugula.
And this is the meal I mentioned the other day that was not a keeper.  I thumbed through recipes for a Jambalaya recipe . . .

I found several and honestly don't remember where I got it.  But it's o.k.  I think we really just didn't like it because it was such a thick 'tomatoey' sauce.  Not the recipes fault.  Also I planned it all along because I wanted to put in Kielbasa.  And guess what.  None in the freezer!  Duh!

A yummy Asian Chopped Salad.  And it was really good with the 
Jambalaya.
On the Breakfast plate yummy Scrambled Eggs and Little Smokies.  I buy these cheap canned Biscuits for the Smokies. 
And then this 'Oh My' yummy Steak.

Cooked in the Kitchen to perfection with no smoke in the house.

Such a super simple filling meal.  All frozen but full of flavor. 
Frozen Spinach Cheese Ravioli from Sprouts.  Honestly I am not sure if it was prep or I didn't like it as well as the cheaper kind from Kroger.  I suspect maybe it was just not hot enough.  We'll see I only cooked a few. More for another meal.


The Salad was so yummy.  Spinach and fresh Strawberries with a Warm Bacon Dressing. 

The Salad was so good.  I almost tossed in some Walnuts but the Cowboy would have frowned.  BTW I put Walnuts in mine. 
The Cowboy asked for Chorizo Breakfast Taco's.  I made 4 and put two in the freezer. 


Have I mentioned that these plates were my Mother's.  They were her Mothers Day gift for a few years.  We got married in 77 and when I was shopping for my registry she saw these.  I inherited the complete set. 

I told the Cowboy there are somethings I do well.  A dinner of Pork Chops, Rice, Cream Gravy and Black Eyes.  A simple one for me especially since I included frozen Pillsbury Biscuits.  
Couldn't make a decent Biscuit if my life depended on it!
But I can make a good Pork Chop and Gravy

The Cowboy wanted Chorizo on Biscuits with the left over 
Gravy and Scramble Eggs.  At least he ate it all. 

Oh and this meal.  Was soooo yummy.  The photo's don't do it justice.  I cooked Chili Relleno's with a Cheese Sauce.  I considered doing an Enchilada version but I wasn't tired that day so I did the real deal. 

Served with White Chicken Chili.  The Cowboy opted out of the 
Avocado on top.  Sometimes he is just wierd in my book.  I never pass up an Avocado!

The Cowboy made the Guac!  I had so much goin' on I had to yell for help!

We had a week of some yummy dishes that is for sure.  
And now to share with you how to Grill a Steak in your Kitchen!

Reverse Sear Steak
It really is easier than you think to make a Steak just like from a fancy Steak House.  Nothing fancy needed except a big hunk of Beef.  

You must have a meat thermometer!
1st sprinkle liberally with S&P . . . Kosher if you have it if not it is not a deal breaker.  
Let it sit for a bit and get to room temp. or just not cold 
While it's sittin turn on your oven to 400 stick your pan in and get it good and HOT! 
I use a grill pan sometimes.  Sometimes I use an iron skillet.  
I don't think it matters. 
Once it is good and hot slap that Steak on the pan and put back in the oven.  You'll then leave it for 3 minutes or so and then check it's temp right in the middle the thickest part. 

This is important it must get up to 180. 
 When it does immediately take out of oven and put on the stove on Hot and cook on each side. I do 3 minutes for a thick Steak. 
This is the part where you'll have to wing it till you get your optimum doneness.  I just know how long it takes.  If it's a sissy thin Steak and that is o.k. I just leave on a minute and turn.  

That's it no smoke 
and 
Oh So Yummy
BTW I never marinate my steak.  And, I only use this method for Rib Eyes.
