Busy Monday and a Recipe

 Good Morning!  How was your Christmas?  Ours was Blessed 

Although it was only us two we had some fun days leading up . . . 

We visited the Grand Galvez Hotel I had a chat with Santa.  The hotel is gorgeous and Waaay out of our budget now a days

We had gorgeous weather a few days and we took advantage! 

Car picnic and then . . . 


Our Christmas day was . . . 

Fun 

Blessed 

and 

Lazy 

And now it's time to start a new Busy week. 

We cooked Prime Rib Christmas day so I will get Busy and make Stew and a couple Soups for the freezer. 

We will be Busy on Tuesday.  The Cowboy has a doctor's appointment.  They will discuss again a Liver transplant.  I am praying they will be surprised that God is healing him.   

We have errands after.  I will be Busy going to the Post Office. I joined one of my favorite FB SWAP groups again.  I have to mail . . .

 Then I hope we will go to the  small grocery in town where I buy my house plants. 

 And we will be Busy praying at the Christian Gift Shop in town.  A new project that we have started.  



I also want to go by Five Below to look for a 2024 planner.  I am getting Busy and need to keep myself organized. 

I have a huge list of blog posts and Facebook events and daily posts in Women of Encouragement.  And in my private author group I have   plans to announce promotions for the New Year.  I am starting  Mailbox Monday again in January  . . .

Our Holiday Journey.  The blog I started several years ago.  I have been Busy posting almost daily during December.  It is so fun go over Here 

And I plan to be Busy baking Cookies once a week.  I will post here and on the holiday blog.  

 Here is the recipe I will try this week. 


Ingredients 


1 cup butter (room temperature)

2/3 cup smooth peanut butter 

1 ½ cups brown sugar 

½ cup dark brown sugar 

1 ½ teaspoons vanilla

2 large eggs (room temperature)

2 cups all purpose flour 

1 cup quick cook oat

1 ½ teaspoons baking soda 

1 teaspoon cornstarch

1/4 teaspoon salt 

1/4 teaspoon cinnamon

1/2 cup dark chocolate chunk

1/2 cup milk chocolate chunk

1 cup pretzel piece

1/2 cup honey roasted peanuts 

1/2 cup toffee bits

1 cup pretzel pieces

1/2 cup honey roasted peanuts

Preheat your oven to 350 degrees and line a couple cookie pans with parchment paper {depending on how much of the cookie dough you want to bake off right away}.

In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and peanut butter until smooth. Add in the brown sugars and beat until pale and fluffy. Scrape down the sides of the bowl add the eggs and beat until fluffy. Add in vanilla, and beat until combined.

In a small bowl, whisk together four, oats, baking soda, corn starch, cinnamon and salt. Add in two additions to the wet ingredients, beating on low speed until completely combined. The batter may seem a bit soft, but don’t worry – this is what you want. Add in the chocolate chunks, pretzel pieces, roasted peanuts and toffee bits; mix on low until evenly distributed.

Using a cookie scoop or two teaspoons, scoop your batter out into about 1 tbsp portions out onto your baking sheets leaving at least 1.5 to 2 inches between each cookie. I usually put no more than 12 onto each tray.

Bake for 10-12 minutes or until the tops are beginning to crackle and the edges are golden brown.

Remove from the oven and allow to cool for at least five minutes.  

Time to make breakfast  and get that Cookie baking going!

Busy Monday

 Hello.  How's your day going? 

Are you Busy getting  ready for Christmas? 

I am super Busy trying to find or figure out a gift for the Cowboy.  And I only have a couple days!  

And I have been crocheting every chance I get.  Look at my blanket now! 


It is close to covering  the top of the bed now.  I think!   Lola was napping and I didn't  want to make her move.  So I laid it vertical instead of across. 

There is a good bit hanging off the side.   I have been  Busy !!

I have a new project  . . . 

This is 1/4 of the stack of paper donated  for the project.   I will be super Busy making and recruiting  help to make Prayer Pockets to distribute in February. 

Don't  you live  our warm and cozy Faux Fire?  It is other t.v. 

I need to get Busy and take pictures of the house.  This year I have been Busy trying to post daily on Our Holiday Journey.  Visit my blog over  Here

Last  December  I made a December  Daily Journal.  Ijust learned about them.  It was too late to do one.  But I put it together.  

I began using it this year . . .  
It has been super fun documenting our days . . . 
And writing my thoughts . . . 
We or I try to keep us Busy.  This was a super special  day and outing.   I hope to make one for our daughter for next year!

Like most mom's/wife's I stay busy with chores.   I had just finished  mopping the other day and then I was getting ready to cook breakfast . . . 

Opps!

A super fun day last week.  We were in town shopping and looking for the sculptures  scattered around.  These are super cool made from things washed  up on the beach!  There are several  around town  that will keep us Busy finding them!  

We have another new project manning the Prayer Room at the Christian Gift Shop in town.  We began Saturday.  It was a special  late shopping day in town.  We prayed with 6 different  shoppers that came in!

It is where we will distribute  the Prayer Pockets in February.  


A favorite every year is looking at Christmas  lights.  
Now a days I am the driver and he takes pictures  . . . 
We love driving  around town! 

We enjoy our new life of retirement.   

And we stay Busy

Foodie Friday

 

Lookie.  Lookie.  I found my holiday cookies!

I checked 2 Family Dollar stores last week.  And every grocery store.  Even checked Amazon.  
Insert pout!
And then look!
I found them at the Family  Dollar where I bought them last year!  Notice a few already gone. 
But bummer.  The box is smaller!  I bought 2.  Will go back Wednesday  for more! 


I did cook some healthy  meals this week . . .  

He decided  to go out for breakfast . . . 


He has strange ideas.  One morning he wanted a bagel.  

I think my Garlic/Onion with Guacamole  served on Spinach  was much better! 

One night I cooked Ribs.  They were so good! 

And for my Birthday which kept me busy  last week . . . 
He ordered Soft Shell Crab Sandwich no bun. 
I ordered Grilled Chicken  with Crawfish  Ettoufee and just look at that Grilled Squash! It was so good!
And look at my dessert.  Oh yummy!

I couldn't  get him to eat an Egg.  The Bacon was Beef and not a keeper!  

My attempt at Beef Stew which was more like soup but it was so good!  

I cut up too much Ham.  Couldn't  waste it right? 
Served with an Omelet  and Tots because I couldn't find Hash Browns on the Island! 

Island life can be odd and challenging  sometimes. 

A healthy meal he did not like. 
 He said the Greens were tough.  And he thought the Chicken  Lasagna was Tuna Casserole.   He complimented me on not putting Peas in it.  

But we both loved 0the Chicken and Dumplings.  Best I have ever made!

If I can get him to eat Eggs it must be in a Tortilla  with breakfast  meat and cheese!
This time Sausage  which I added the leftovers  to . . . 
. . . Chili.  Which he didn't  like. 
I think some days he is in a mood.  I thought it was fine.  

 
 
I even got it a proper thickness! Oh well maybe next time! 

It is a daily challenge.  He usually likes Chicken Wings . . . 
He ate the leftover Chicken and Dumplings, two wings and 2 bites of the Slaw. 

He chose only a Croissant with Peanut Butter

I attempted a Breakfast Bar.  Dropped an Egg right after I had mopped.   

This was the choice . . . 
Chorizo, Avacado,Egg on Croissant. 
He chose a Croissant with Jelly 
Maybe if I hadn't put the Jelly out he wouldn't have thought about it . . . 
Nah he just couldn't help using the cute spreaders Right? 


Prime Rib from the freezer.  It re-heated excellent.  He did like the Oriental Shrimp. 

And today we have to go grocery shopping.  Tonight's dinner will be a surprise. 

Time to eat a Cookie!
