Lime Truffles and Ocean Breezes


In A Shot in the 80% Dark, Felicity is creating a chocolate sculpture of a giant boat, to celebrate the maritime history of Galveston, Texas, the island where the books are set. To go with the maritime theme, she creates a set of bonbons with flavors the project has inspired. There are hints of pirate history, and the museum’s mouthy cockatoo, which puts her in the mind of coconut, lime and ginger. They make her think of a tropical drink, and she imagines that the bonbons will transport visitors at the museum’s gala, where the sculpture will be unveiled, into the world of the sculpture. Of course, since it’s a murder mystery, there’s a snag, and one of the artists who has been helping Felicity construct the sculpture winds up dead. She has to solve the mystery before she can actually share her bon-bons.

I love the fact that throughout this book series, I have been able to write about many of my favorite things about Galveston. Sometimes it is just the simplest things: like being on the beach, enjoying ocean breezes. And in my daydreams, this truffle transports me there.

The version of this recipe in the book is fairly complicated. Felicity is layering lime curd with a white chocolate coconut ganache and a dark chocolate ginger ganache, inside shells created using polycarbonate molds. Here, I’ve simplified the recipe, combining all three flavors into a ganache that is firm enough to roll into a truffle, so that it doesn’t require any special equipment. If you prefer a non-alcoholic truffle, feel free to omit the rum and add a teaspoon of vanilla extract instead. 

1 c. heavy cream

5 Tbsp. lime curd

2 Tbsp. chopped crystalized ginger

¼ c. rum

1 tsp. lime zest

2 Tbsp. coconut powder

1 lb. dark chocolate, chopped

Sweetened Flaked coconut, for rolling


Place the cream in a medium pot and heat over medium-low until the cream starts to steam.


Place the chopped chocolate in a large bowl. Pour the cream over it, and allow it to sit for several minutes, until the chocolate starts to melt. Whisk the mixture until smooth.

Place the lime curd, crystalized ginger, rum, lime zest and coconut powder in the bowl of a blender or food processor. Process until as smooth as possible. Pour the mixture over the chocolate/cream mixture and whisk until evenly combined. Place the ganache in the refrigerator for at least two hours.

Roll the ganache mixture into 1-inch balls. Roll each ball into the flaked coconut.

Felicity may have to take some chances, both emotionally and in luring out a killer, to determine the truth.

Foodie Friday

 A late post but here's what I have put on the dinner plate . . . 


Pork Chops, Mashed  Potatoes and Gravy.  They stuck to the pan but made great Gravy.  I made Toast to sop up the Gravy! 
We love this Casserole. . . 
In my church lady Cookbook from when I was a teenager.

I was tired Friday after going for groceries.  I thought I was going to do Steaks but the Cowboy instead they need to be marinated. 
Steak tonight! 
He had picked up the Burger Patties marked down.  I probably cooked too long they were tough.  

His idea of healthy.  The afternoon snack.  I guess it is better than cookies. 

Uploaded by accident.  But aren't they sweet.  

This is the Chili I mad last week . . . 
It was so good.  I usually add Beer.  But I didn't have any.  Our Kroger won't let you buy 1.  But I had a bit of Tequila.  Guess what.  Going to buy more Tequila.  It was really good! 
French Toast from marked down Italian Bread.  It was yummy. 


He is eating breakfast again!  
Remember the Tequila Chili?  I added Potatoes and Carrots and made Stew.  To go with Chili Rellenos. 
I love Chili Rellenos 
I couldn't completely keep him away from the sweets. I am praying he will have a significant weight gain so the Doctor will notice. 

Trying to eat Red Meat for Iron.  He likes Spinach but it was $3.00 a bunch!  I have a can I will serve tonight with the Steak. 

Meals are always a challenge.   Maybe you have ideas!  Please share!

My Crochet Ta Da Moment & My Next Project

 Hello.  I am super excited your here today!  I am sharing my finished project . . . 

Isn't she pretty.  Just look at that Pom Pom border! 

It does cover our King Size bed . . . 
But it ended up being a throw
One of the sections I love.  I love the Lavender swooping stitches.  
I followed the pattern in the CAL . . .
This was an already complicated Crochet A Long.  The pattern and tutorials are over Here

I loved making it . . . 
I had stopped for several months almost a year because of our move.  And I needed to buy more yarn.  I started collecting more yarn when I found it on sale.  All the yarn I get now online.    There are no shops on the island that have yarn.  
I originally intended to make the complete blanket to cover our bed but I realized that my blanket was very crooked making my sides wonky. 

So I started taking a few sections apart to try and fix it.  
Then I folded it up and just looked at it a few days . . . 
There were parts I was really happy with .  So I salvaged the first fourth and added the fringe . . . 

Looking back I think I might have been able to save more . . . 
But I am happy with it.  It is really wide and I think I will enjoy wrapping up in it on the porch when it turns cool.  

And now I am on to my next project using the leftovers . . . 
Lots and lots of colors to make pretty flowers . . . 
 
I think this might be the pattern. 
We'll see. I am still looking at patterns.   For now I just making centers.  They are fast and easy to make when you have a few minutes  . . . 

And now it's time to go Crochet!

Tessa’s Peanut Butter Chocolate Chip Cookie Recipe

 

Ingredients:

 

2 1/4 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon baking soda

1 stick (1/2 cup) butter at room temperature

3/4 cup peanut butter

1 cup light brown sugar

1/2 cup granulated sugar

2 large eggs, at room temperature

1 teaspoon vanilla extract

1 1/2 cups semi-sweet chocolate chips

 

 

Preparation:

 

 

Sift the flour, salt and baking soda into a bowl and mix together.

 

Whisk the butter and peanut butter together in another bowl. Add the sugars and beat until light and fluffy. Whisk the eggs one at a time into the butter mixture along with the vanilla extract. Whisk until combined.

 

Gradually add the dry ingredients to the peanut butter mixture and whisk until combined.

 

Using a spoon, mix in the chocolate chips.

 

Cover the dough in plastic wrap.

 

Refrigerate for at least thirty minutes but overnight is fine.

 

Preheat the oven to 350 degrees Fahrenheit.

 

Line two large baking sheets with parchment paper.

 

Remove the dough from the fridge. You might need to leave it at room temperature for a few minutes, if it’s too hard. As soon as it’s soft enough, spoon the mixture in 2 heaped tablespoon measurements onto the baking sheets about two inches apart. I use an ice cream scoop.

 

This recipe makes about 30 cookies.

 

Bake for about 10 to 12 minutes until they are brown around the edges. The cookies will be soft but will harden more as they cool.  

 

Leave to cool on the tray for about 10 minutes, then transfer to a wire rack to cool completely.

Happy Homemaker in Texas

The weather

Sunday and Monday clouds and 91/92.   Tuesday thru next week scattered showers.  Still 90/91 most days. 

As I look out my window

Hearing the neighbors.  They are on the way to Chuckie Cheese for 3 year old birthday.  She is super excited! 

Right now I am 

Resting.  I have been busy all day finishing this . . . 

I am in love withe white border . . . 
And so glad I decided it was time to 'give in' and put the border on. 
My Ta Da Moment 

Thinking and Pondering  about my next crochet project.  It is Fall theme blanket with Sunflowers.  I think I have all the yarn I need now.  I have been getting a few skeins each month as I find it in sale. 

How I am feeling . . . Tired from sitting most of the morning.  And feeling accomplished ... last night I stepped out of my comfort zone and took the dogs to the Seawall alone. 

The Cowboy has no interest in getting out.  

On the breakfast plate 

French Toast and Bacon.  He will add syrup.  I add powdered sugar to mine. 

On the lunch plate 

No lunch.  We had brunch.

Last night I made Chili.  It was so good.
