Sunday Supper-Church Ladies Cookbook

One of our favorite recipes is a casserole that was shared with us 
when our kids were young. By that time we weren't newlyweds.
We'd been married a few years.

Our family loved that recipe and still does.  It was given to me on a recipe card that some how got lost over the years.  And we kind of forgot about it.

Until one day many years later. Actually a few months ago.  The
recipe surfaced in a different place.

I was happy to find it once again.  But there was something that was different about.  I couldn't put my finger on it.  But it tasted good just the same.
Sausage and Rice Casserole ~ Recipe from an old Paula Deen cookbook- Can adjust for NIck by making a white sauce using brown rice flour and rice milk
I knew this one wasn't exactly the same.  The original version 
called for Lipton Noodle soup and fresh celery.  
This version called for Cream of Celery.  Click here to try this version.  Alot of people don't like the crunch of celery so this might be a better option.  I boil my celery and use the broth as part of the liquid so it isn't crunchy.

Back to pinterest I went looking for 'The Recipe'.  I found a few
similar versions but it wasn't the same.  I remembered the original version had bell pepper but that is all I remembered.

And then it happened.  I was looking for a Broccoli Cheese Rice recipe I know what your thinking who has to look up a recipe for something so easy.  And guess what  I found in this of all places
This was my home church.  The church where the Cowboy  and I got married.  The church where I ate many potluck dinners as a child and teenager.  And honestly I doubt I ever ate that casserole. 
It was just not something I would have eaten waaaaay back then.

I am glad I still have this church lady cookbook in my collection.
Here are a few of from my collection.  My church cookbook was from 1973.  Most of the others are from 80's or early 90's.  Actually the red one on the left is not a church lady cookbook it's a Jr. League cookbook.  We didn't have Cowboy church back then at least not around us.  All these books are my favorites.  It's amazing how they all have such different recipes!

below I've typed the recipe for you.
Sausage Casserole
by Margarett Blain
Springdale Baptist Church
Fort Worth, Texas 
1973
written just as it was in the cookbook
Brown and drain: 1 lb hot sausage, 1 lb reg. sausage
Saute in sausage drippings:
2 cups celery, 2 onions, 1 bell pepper
Cook together till done;
2 cups regular rice
2 boxes (4 envelopes) Lipton Noodle soup mix
9 cups water

Mix 1/2 cup almonds, sausage-rice mixture, celery, etc in 
greased container.  Sprinkle with remaining almonds on top.
Cover with foil.  Bake 350 for 45 minutes.  Serves 15-20 people.
