There’s something special about a steaming hot mug of tea and the ritual around it. I do drink coffee, but when I do, I’ll be checking emails in the morning or watching the news while writing up a to-do list.
When it comes to tea, I actually take a few moments to savor it. I don’t have a large collection of teapots, only three. They are very special to me.
The thatched roof teapot was given to me from my mother-in-law.
The short, round one with shamrocks on it came from my Aunt Bridie.
The Blue Willow teapot is one I purchased over thirty-years ago after I got married.
And that’s when I started baking scones and I’m thrilled to be sharing my favorite scone recipe with you today.
White Chocolate Chip Scones
Light and sweet, these scones are perfect for breakfast or a mid-day snack.
Ingredients
1 egg (slightly beaten)
Buttermilk
2 cups all-purpose flour
1/4 cup sugar
2 1/2 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons butter
1/2 cup white chocolate chips
1/2 cup raisins
Instructions
Place egg in a liquid measuring cup. Add enough buttermilk to equal 1 cup, set aside.
In a large mixing bowl, combine flour, sugar, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in raisins and white chocolate chips. Add milk and egg mixture. Stir until dough clings together.
Drop dough, use 1/4 cup measure, onto an ungreased baking sheet. Bake at 400 degrees for 12-15 minutes until golden brown.
Serve warm and enjoy!
