Kiki Lowenstein rarely has time to bake. In the early books in the series, she doesn’t even have an oven that works. But she loves sweets, and she particularly adores peanut butter and chocolate. If you ask her, Kiki would swear these cookies are healthy because of the oatmeal!
Kiki’s Healthy (?) Chocolate Peanut Butter No-Bake Cookies
Ingredients
2 C. granulated sugar
1 stick butter
½ C. milk
1/3 C. baking cocoa
1 C. peanut butter (smooth or chunky)
1 tsp. vanilla
A pinch kosher salt
3 C. oats (uncooked, quick or old-fashioned)
Directions:
Line a baking sheet or plate with waxed paper.
Bring sugar, butter, milk, and cocoa to a boil.
Stir in vanilla and salt until combined.
Add peanut butter until well mixed
Mix in oatmeal
Drop by tablespoons onto wax paper. Chill.
Try very hard not to eat them all in 24 hours.
