So, here is a recipe that is one of my favorites. Also I copied the ingredients from Suzy at The Mediterranean Dish, growing up, my mother used to make veal and chicken schnitzel all the time. You can find the original recipe here www.themediterraneandish.com
B.K.'s Chicken Schnitzel
4 boneless skinless chicken breast pieces (about 1 pound and 5 oz)
Kosher salt and black pepper
½ tablespoon garlic powder
½ tablespoon paprika
1 teaspoon dried oregano
½ cup all-purpose flour
2 eggs
1 ½ cups bread crumbs such as panko bread crumbs
Extra Virgin Olive Oil
1 Lemon, juice of
Pound the chicken breasts, one at the time, between two sheets of parchment paper (or use a Zip-lock bag) until the breast are about 1/8 inch or so thick.
Season chicken with salt, pepper, paprika, oregano (I usually leave the oregano off) and garlic powder.
Coat both sides with flower, shake off excess. Dredge in beaten eggs, and finally coat with panko bread crumbs. (I really like the panko because of the crunchy texture)
Heat ½ cup of olive oil in pan and carefully add the chicken. Cook for about four minutes, then turn over for another four minutes or so. The chicken breast should be golden brown on both sides.
Place on paper towel to drain excess fat. Squeeze lemon juice over it and serve with a wedge of lemon.
I usually serve French fries or home fries and a mixed salad with it.

These were so good. If I could find shells like this I wouldn't have to make my own. We can't get decent ones at our grocery stores.Wednesday ... Birjit's Chicken Schnitzel , Potato Gnocchi and Tossed Salad
Thursday ... Pan-Seared Pollock with Jalepeno Cream Sauce, Mexican Rice and Guacamole
Friday ... Rib Eye's and Mushroom Sauce, Onion Rings, Mexican Street Corn Casserole
Saturday . . . C.O.R.N Clean Out Refrigerator day. If there are any leftovers from all these yummy meals!
