Good Morning. Welcome to a new and Fabulous Week!
Menu planning has gone a bit awry here at the My Journey Back
house.
With all the new health restrictions and with learning to live on
our Social Security income I am not as free to go shopping for
extra's to add to my pantry. Also because of the Cowboys condition(s) we are trying to isolate as much as possible.
I am wondering. Has the new social distancing measures made a change in the way you plan your menus?
For us for now I work with what I have. My pantry is full of
canned veggies. And my freezer is full. But there isn't a lot of variety.
So for this week I have a few plans based on what I have on
hand. I need some fresh fruits and veggies. I will go to a food
pantry in the morning so my prayer is I am able to get some
meat, fresh veggies and Eggs.
Here' are my plans for the week . . .
Tonight we will have leftover Roast, Potato's/Carrots and I found a little Cauliflower from last week in the fridge.
Do you do that?
Loose things in the fridge?
Chicken Breasts a pot pie will go nicely with the canned Green Beans, Peas and Carrots this one will be a challenge I'll have to make a pie crust.
Pork Loin I need to find a new recipe to try otherwise I'll just roast it and add some Potato's open a can of Green Beans and Corn
Ground Beef the old stand by Spaghetti will get it doDry Beans, Pinto's, Great Northern, Black Eye Peas, Split Peas
make a great Mixed Bean soup. And some Corn Bread and we'll have a meal.
That's 4 days worth I'm thinking I'll have some leftovers that I can whip up on Friday or Saturday. Maybe a Cottage Pie I've never made one maybe we'll give it a try.

I tend to do a pretty good job of keeping track of what in our fridge but we tend to eats lots of fresh fruits and vegetables. I'm more apt to lose stuff in the freezer.
ReplyDeleteWe have stocked our pantry too. We are fortunate as our middle and her hubby live with us and both are excellent cooks so we all contribute to the menu. Our daughter makes an excellent dill lemon sauce for salmon on the grill. A few veggies and it is a nice meal. Making a chicken pot pie, I cheat. I could never make a decent pie crust from scratch so I buy the frozen ones and a package of the crusts you can cut into strips or top whole on the pie. We make tacos and burritos as both are pretty economical. Chicken and rice is a great one too. The hubby loves stew even in this heat wave so it is nice to throw into the insta pot. Sometime our youngest son, who works from home and still lives with us too. We make rice-a-roni and add fresh veggies. You can add cookedcchicken or beef too but we love the veggies. The son-in-law is a great barbeque master so he often spends a whole weekend day smoking a brisket. The first time he did it was amazing. I did a post at my second blog about the blintzes we had yesterday. Our other SIL and daughter live a few doors away so they were both great getting those ready for us to enjoy. That is it for now.
